Honestly, it seems pretty ridiculous to me. I can think of no good reasons
why (i) people don't distribute multichannel music in uncompressed
discrete formats,
Copy protection (DRM) is one reason. Quality live multi-channel
recordings are not cheap to produce, and files are rather easy to copy.
SACD and DVD-A can both offer various forms of protection. Meridian
Lossless Packing (i.e. lossless compression) is used on DVD-A to get
more audio onto the medium, and that requires a licence too. Standard
4GB file formats such as WAVE and AIFF can run out of space surprisingly
quickly for high-resolution (24/96) multi-channel PCM audio.
and (ii) there are no mac based ways of turning stereo
recordings into multichannel outputs using an Audio Unit that does the
same sort of thing as Dolby's Pro Logic hardware.
As I reported before, the industrial-strength methods are patented, so
such plugins will incur licence fees, and add significant cost to the
machine/OS. It is not something all users will need. So you will just
have to purchase them yourself. They will probably not cost more than
buying a new Mac "just" for the new HDMI interface.
In the meantime, this site sells (among other formats) uncompressed m/c
recordings for download:

The proprietor, Mark Waldrep, a doyen of the audiophile scene, has long
lurked on the sursound list, and pops up from time to time. It is indeed
how I came to know about itrax in the first place. If you are serious
about finding material, that is the place to ask.
