See example 6 here:

It shows how you can use ExtAudioFile to save just a portion of an
existing audio file into a new file, and it shows fading out the
volume. You would need to adapt it a bit to fade in and out, but that
should not be too hard.
When you have a smaller segment, then play it with AVAudioPlayer the normal way.
