Trimming heads and tails for audio

Hello.

I have worked through the samples that show me how to use Core Audio to record audio, and then play it back.  I have a working application that can record and play compressed formats.
There is a very interesting thread on trimming compressed audio so it loops correctly but I am confused as to how to trim the beginning or end of the file and save it as a new file.
Are then any tutorials or sample code or books that describe the process?
I have found some other requests on this list for similar help but there are no answers.
