I am making musical instruments. I would love to be able to export MIDI  to eg  some music software running on the Mac

But I don't know anything about how to do this.  I haven't even used MIDI software OR  instruments before. I am very green in this field.

 I cannot find any documentation. But some developers have already started putting out MIDI capable apps.

 could someone  take a few moments to explain to me:
1)  what is the mechanism whereby I press buttons on my iPad,  and say FruityLoops Plays 'C4 D4 E4'
  obviously  the button implements some core-MIDI API call  which does all the hard work of sending it through
  over USB?   only USB?  or WiFi?  BT?

2)  can we even talk about this on these lists without breaking NDA?  

3)  can anyone link me to source code / documentation /  any resource for getting started?    I guess this is documented for OSX?   so maybe I just have to use that documentation, and some common sense /  looking in header files for parameters that might have been relabelled etc?

If anyone can help me get my feet wet here I am very grateful!
