Are you definitely running the release version? By default 'run' will run debug (whereas instrument will run release)

I'm trying to finish up an iPad app that uses granular synthesis.  Peculiarly, I'm finding that I can get many more (60%) grain voices when I'm running under Instruments (on the same iPad 2).  I thought I could tune the user selectable number of voices while watching the CPU% in Instruments.  Then I launched the app without and it behaves totally differently.  I'm using AU RemoteIO.

Any advice appreciated,
