Wow! Thanks for all your replies folks.
Most seemed to point to bad reception quality or Wireless signal interference from other devices, rather than a CoreMIDI error.
Bluetooth interference is an interesting idea, and certainly possible after our show added a four iPad setup with a host/client configuration syncing over Bluetooth.
Thanks everyone for the RTP-MIDI info.  We had no hung notes, just a second or so of note-on messages disappearing. This fits with the described UDP system with data discarded after a long delay.  Thank you John for descriping how RTP-MIDI attempts to complete MIDI messages to avoid stuck notes, while also preventing a burst of delayed data playing when it arrives.
Using a UK Airport Extreme for our US shows, and with no way to choose US wireless channels within the Airport Utility country settings, we wondered if UK channels might be the cause of interference.  A simple 5GHz network seemed to solve our Network problem.
