Getting the best quality sound with CAF files for a MIDI instrument

Hey everyone, I'm relatively new to core audio and I've been working on making virtual instruments for iOS, but my audio files seems to lose a lot of the sound quality when I convert the sounds to CAF files with afconvert. I can get an ok sound if I reduce the note velocity to about 100, but I'd also like the to get the sounds as loud as possible. So my question is how can I get the best quality sounds while keeping them as loud as possible? Should I record each note individually?
