Since I'm merely an interested observer in all this audio goop, rather
than an active programmer: is there really a prohibition on multiple
output units in an AUGraph, or was this also an artifact of iOS
thinking?

Granted, you'll probably want to go the aggregate device route to avoid
clock drift.
