Why is integer only to 24 bits? I was actually thinking of making a 32 bit stereo ADC, but not if it's going to chop off the lowest 8 bits.

well for AD converters... it is. simply because there are no converters which can do analog to 32 bit integer.

files and streams otoh can be of up to 64 bit integer resolution and precision since MacOS 6.
