I tried using gdb, but it would not attach to the pid. (I suppose I could
try and attach *before* it hung, but I suspect once it's hung I won't be
able to get anything)

I'm not familiar with "Instruments" (or xray).  Should I assume it has more
powerful kungfu than gdb?

Time to do some homework...
