Found an answer to my question:
I finally rebuilt the sources manually (without darwinbuild) and was able to generate my debug kernel properly.
I just had to export my debug and target variables to my environment then ran:
make exporthdrs all
make all
and it worked, as explained in the apple darwin documentation.

I tcompiled the latest xnu 1228.15.4 (for build 10C540) release,
and it gave me a fat (i386,x86_64) mach_kernel which boots the system,
but extremely slowly (~10 min to boot on my intel macbook pro with snow leopard 10.6.2).
I used the latest svn darwinbuild tool and the latest 10.6.2 open source xnu release.
Am I missing something ?
Is there a recommended procedure to build this kernel properly ?

They are available in the usual location, at <http://opensource.apple.com/>. You will also notice pages for iPhone 3.1.1 and 3.1.2, but those releases had no new open source code to post.
