1. if I loaded Darwin on these, could I use XCode on my laptop and add these servers to my distributed build in XCode and would Code use them?
You could try to make a full compile farm there using cross-compilers.
2. Would I be able to compile GUI based apps without snow leopard on
each server (can't because they are HP x86 servers)?
Yes, you would. Though only installed to compile for OSX 10.3 - 10.5 universal binaries, see http://devs.openttd.org/~truebrain/compile-farm/apple-darwin9.txt how to setup a cross-compiler from lin to OSX. But it most probably needs a bit more of trickery.

But will XCode see the darwin machines and use them?
In XCode -> Preferences -> Distributed Build?
