If I understand this properly, you've selected just your process (ioServer) in the "Process" box at the bottom of the Shark display. If so, that's not going to help you much because your process is probably blocked waiting for another process to yield the funnel. If you switch to viewing all processes, you'll be able to see what the rest of the system was doing while you were waiting.

btw It might be helpful to disable your second CPU for the duration of this test.
