The kernel build mechanism is Makefile based, so some IDE won't help to build. Typing "make" in Terminal isn't exactly horrible, though.

xcode?

Gives a nice editor. Other editors (BBEdit, TextWrangler, SubEthaEdit, ...) should work as well.
