FireLog works really well. You can find it in the FireWire SDK, that
you can download from ADC.
It requires a second Mac. The logging messages are sent over a
FireWire cable to a GUI on the other Macintosh.
There is also some manner of logging facility available as part of
USB, but I haven't used it.
A big advantage of FireLog is that if your Mac crashes, you'll still
be able to see the last few messages, that IOLog would not have gotten
out to the system log file yet.
