There is a timer that is reset by watchdogtimerd at regular intervals, and if the timer reaches 0, the machine will restart. If that happens in middle of a dump it will still restart and thus interrupt your dump. You can adjust the interval to be longer than the time it takes to dump in:
/System/Library/LaunchDaemons/com.apple.watchdogtimerd.plist
