We use PGP whole disk encryption on our Macs. In general it works well and we feel good about having it. However, we have had some teething pains.
It doesn't yet work with Boot Camp and the the software has been a little buggy. For example the early versions didn't resume the initial encryption if the computer was put to sleep or unplugged (running on battery). The other issue is that we will need to either decrypt the disk when we do a major upgrade such as upgrade Leopard to Snow Leopard or swap disks and do a migration install via FireWire target mode. Either of these will add time to the upgrade compared to not having encryption or using FileVault (which has the same restrictions).
