Of course, such a thing is completely unsupported by Apple. And there is a risk: Getting an ACK packet from the NAS is not the same as having the data written to disk. So if you're using an unsupported network drive and there's a failure, you could end up with incomplete data in the backup. That's a Bad Thing.
Time Capsule gets around this problem by using a modified network stack. In short, it doesn't send ACK data packets until the disk driver confirms it's written to disk. This sort of coupling of disk driver to network driver is, shall we say, unusual. :)
