At home I have a G5 (10.5 client) with an a 5TB external sata enclosure mounted. I have a share on the drive that I mounted on my wife's MacBook. I set the Time Machine backup drive to the share and it all works great. TM mounts the share, backs up, then unmounts the share. No user intervention required.

Of course you could configure the TM to backup to your SAN.
But what kind of performance impact would that have? To have a ton of machines backing up, every hour, to a central machine?

Joel,
Time Machine does not allow for backup to a SAN. You can assign a Time Machine backup to a network volume, but it must be one designated by a Mac OS X Server specifically for TM.
