Same here... with an IPCC I get VVM, MMS and Tethering (that means no jailbreaking, no hacking).. and an OS that does not crash my phone and great battery life. I think Apple should WARN users before they upgrade that they cannot downgrade.
I do not know HOW I did it, but I did get 3.1 on a 3G phone to MMs, VVM and tether... I cannot reproduce it though... I think that particular phone does not have the latest baseband, so the baseband may be what is affecting tethering on the 3.1.. all I know is that from what I can tell, I have the only 3.1 iphone that does all three without hacking (at least on the ATT network)
I've seen (but not verified) that if you get an iPhone and restore it right away (to it's current version, in this case if you had 3.0.1), after it is restored once, apple signs the OS and your Mac stores the signature, thereby allowing you to at least restore to the version.. the problem i had was when I upgraded to Snow Leopard I decided to blow away and do a fresh install, thereby losing the IBSS (I think is what it is called, the Apple signature on the 3.0.1 restore for my device).
I put that 3GS on craigslist, sold it within a few hours, went to ATT (where they do not have updated phones) and bought two 3GS phones with 3.0.1 on them, which will never be upgraded. I will upgrade ONE of them when ATT decides to enable us to use tethering (probably three years, since they just now enabled MMS, three years after launch).

I had 3.1 on my iPhone for exactly one day and noticed poor battery
life, reduced cellular strength, and had a "coma". I had no idea of
these issues before I installed it. Needless to say, I'm now back on
3.0.1 and enjoying tethering and what to me is a far more stable OS.
