Your second paragraph contradicts everything else. You say you only want a network connection for software updates, well, you have to use iTunes for the software update. Why not dedicate one Mac for your iPod updates and software installation? You can sync as many iPods as you want on a single Mac. Secure that Mac and be done with it. At the same time, you can use this Mac to configure the iPod with whatever amount of security it is capable of handling.
As for having a standalone iPod without any (other) network connection, what kind of use are you projecting? Do you ever think you'll use the iPod to capture any data and need to transfer it somewhere?
