Snow Leopard will only likely be supported until the next major release of Mac OS X. But since Apple also doesn't provide an EOL schedule -- or even confirm that already EOL OSes have indeed been EOLed! -- there is no way to tell for sure.
For reference, Apple has always only provided OS and security updates for 10.x-1 where 10.x is the current shipping release of Mac OS X. There have been a couple of instances where an update was pushed out for 10.x-2 shortly after 10.x shipped, but it's probably because it was already in the development pipeline. In general, consider that 10.x and 10.x-1 are the only versions of Mac OS X supported with OS and security updates.
So, with Apple's OS release history, expect Snow Leopard to be supported for a maximum of another 18-24 months.
That said, let me respond to your list:
1. No cac
I'm reserving judgement on this until we can get a definitive response from Apple (Shawn, can you put something together?) once Lion ships.
2. No java
Does this really matter? Apple still delivers Java to Mac OS X 10.7.x, it's just a separate download. And soon, Mac OS X will become a Tier 1 Java platform, meaning it's Oracle's responsibility to deliver Java and updates for Java on Mac OS X, just like they do on Windows.
3. Horrendous o/s distribution model
Other than the very first copy in any organization having to be obtained to from the App Store, Lion can be distributed/deployed like any previous version of Mac OS X. This includes anything from simply installing directly onto an arbitrary number of systems from external bootable media to InstaDMG, NetInstall, NIU, asr, CCC, or any number of other deployment tools.

4. The app store
Easy interim response: don't use it. (I realize some apps may start being delivered only via the App Store, and Apple is aware of the hole in enterprise distribution here. I'm not sure if/how it will be solved, but be advised Apple does have an enterprise/volume purchase model for the iOS App Store that is likely to be expanded to the Mac App Store.)
5. No Rosetta
Do we really want to be depending on apps whose developers haven't seen fit to provide ANY updates in over 5 years? Apple could continue providing Rosetta indefinitely, but to what end? The few apps that I have that still depend on Rosetta are garbage, from vendors who have no plans to ever update those apps again.
In any case, remember what Steve Jobs himself said, and what we were told several times at WWDC this year: "Apple is not an enterprise company."
