Hmm, so Mail, Address Book and Calendar (iCal) are removed as part of "hardening"?
I'd go one step further - completely remove all the software (including OS components) that enables networking and removable media access. Then one can truly enjoy a reasonably hardened machine (hardened from usage point of view, of course).
