In my experience (under 10.6 Server), the wiki data is not very portable.
Wiki-pages are stored as:

<UUID>.page/:
images/
revisions.db
attachments/
page.plist
page.html

page.html contains the page with HTML markup using WikiServer-specific CSS
classes instead of "traditional" wiki/markdown-style markup.
"revisions.db" is a sqlite3 database with revisions to the page.plist and
page.html documents.

10.7 Server could be completely different.
