Too bad Safari doesn't provide a whitelist, allowing users to say "disable
Java on all but these sites", the way Firefox does for popup windows (a
popup window whitelist would also be nice).
One possibility would be to use the ClickToPlugin Safari extension:

This does feature a whitelist, so you could configure it to automatically
enable Java for DTS, VPN, DCO, etc, and for all other sites the user would
be required to click to allow the applet to load. I haven't tried it yet,
but I do use the companion plugin ClickToFlash, which does the same thing
but only for Flash. For now, I'm just taking the approach of disabling Java
in Safari completely, and re-enabling it specifically when I need to use a
site that is known to require Java.
