Those “java.” processes are odd.
IIRC, backup programs back in the 90s would use a file’s mod date to tell when the file was last backed up, and would update the mod date if they archived it again.

Do you have some backup program running, perhaps Crashplan (which is written in Java)? Though I doubt that it’d use that old technique.

Another guess is that the “last opened” attribute on the read file(s) gets updated and stored, thereby causing writes to the volume.

Then there’s also Spotlight. It might cause some side effects, too (just a blind guess). You might try setting your volumes to be excluded by Spotlight to see if that changes behavior.
