Toast does an excellent job of this, and has a nice UI as well.

OK, here goes the details, but that is getting really, really off-topic.
What you have to to is write a normal Apple Partition Map at Block 0
(you can go up to block 15), and then the PVD and SVD at Blocks 16 and
17 respectively. Then you put the Main Mac partition behind block 16.
After the Mac partition, put your normal ISO-9660/Joliet structures.
Now my suggestion is to write all shared data into the Mac Partition,
and then use pointers from the ISO directories into the Mac partition
(you can do that, because ISO can address any block on the disk).
That's basically it.
Also, I am postitive Toast can do it. Even freeware can do
it: http://www.versiontracker.com/dyn/moreinfo/macosx/28483

Buring Software like Toast can burn Hybrid Disks easily, you should
look into these applications.
