I ended up creating the CD on the Mac using Toast and then converting
it to an iso file on Windows using Roxio CD Creator (from the physical
CD).
Not the most elegant, but it is reliable!

I have just finished creating my installer and now I need to create a
Mac and Windows ISO disk image. I will be getting the Windows
Installer software today and thought I better figure out how to do
this. I have searched on Google but nothing very current shows up and
was not sure if some of the older procedure would still work. Here si
one I have found
