Slightly OT, but you can run DeployStudio from a firewire drive, and from a Mac OS X client (recent versions will configure the necessary daemons for you).

If you unpack the flat packages with pkgutil --expand, you can then create a dist file and make a flat metapackage out of them with pkgutil --flatten. Just take a peek inside a flat mpkg, they're pretty simple.
