Thanks - sometimes it's hard to know whether I'm failing to find a feature that exists, or whether the feature doesn't exist at all :)
In this case overwriting user entered values is not a problem, so I'll probably go with the last idea you mentioned: Install with the package into /tmp or something, and then copy it out using a bash script…
