Your understanding is correct. Also, the "preflight" scripts from the first mounted iso gets executed even if I start the installer from second mounted iso. I don’t use the InstallationCheck/VolumeCheck scripts in my package.
Regarding the products, we have a single installer which supports multiple products. So both the iso having same installer but the installing files will be outside the installer. We call the "OSX Installer.pkg" to install the product. It will copy the other files from ISO to target system. So the path is very important to copy the files from source to target. In my case, it copies the supporting files from the first mounted iso since the $1 gives the first mounted iso path.
