When running an installer, push CMD-L, then CMD-3 to show all the details.
You can save the log from that window.
After the install completes, it's appended to /var/log/install.log. Note that in Unix, logs get "rotated", which means that when the log gets too long, it gets compressed, set aside, and a new one started.
Console.app is a convenient way to browse logs, and can do filtering.
