2nd question:

Is there a theoretical maximum of interface Mac OS X can handle?

We do not know what is this limit.

A while back we did some limited tests with several ten thousands virtual interfaces (PPP like interfaces). This was to make sure the infrastructure was working well but we did not stress test this configuration with simultaneous data transfers on all those > interfaces.

Can I ask why you ask?

I'm making a file format where I need to have an index of the current interface(s) in use between 1 header and a array of record(s). I was wondering how big I needed to make the index.

Looks like the best way to go would be to have 2 separate files.
