I can't go into a lot of detail, but basically I am seeing my data parser
bail from connections only on AirPort. I have a simulator for testing that
I can feed fake stream data to, including changing the size of buffers, so I
am able to test data split handling, and can't reproduce the problem. I got
to thinking maybe it was possible to get a packet out of order. My
assumption had been that the packets would be in order. So far using log
messages, I haven't pinned down why it's happening.

It's very strange... but aren't they all.

Quite strange. I do know that, in the past (long ago, when there were still wolves in Wales), we would see strange TCP behavior over AirPort. That seems to be in the past, along with the Welsh wolves; I have not seen a problem on AirPort since the first real Mac OS X release.
