'man pppd' is your friend. Since 'pppd' is a daemon, it has no stdout (that's part of being a daemon), so that's not an option (unless you want to build your own version from source).

If you want to use 'pppd' with 'Internet Connect', that app does have a pref to enable logging.

What are your aims?
