I had hoped to use minicom or something similar for this, but never got minicom working. Z-Term works for me on Mac OS X though, using a Keyspan USB->Serial Adapter.

For testing this sort of thing, Z-Term is the perennial favourite for Mac users.

It will show you the list of serial ports and allow you to connect to the port and enter AT commands.

How do I know which devices are connected and which file (/dev/tty0,/dev/tty1...)?

The correct way to do this is by searching the I/O Registry. There's an example of this on the Apple developer web site.
