OK, it looks like that what I'm observing is due to the fact that
Airport is Off (Aiport card is off) when I switch to the Airport
Interface in the Pref Pane.
When I switch on the Airport card, the settings are changed.

No. The default route, the DNS configuration, and the proxy settings
all track the primary network service. This allows you to have both
your Ethernet & AirPort services configured (AND ACTIVE) with the
traffic being routed based on the service order. For example:
Ethernet and AirPort service are both configured
Ethernet is ordered above AirPort in Network Prefs
Ethernet down, AirPort down
sorry, no networking available (unless you're also setup for
dialup)
no proxy configuration
Ethernet up, AirPort down
[default route] network traffic is directed to the Ethernet
Ethernet proxy configuration
Ethernet down, AirPort up
[default route] network traffic is directed to the AirPort
AirPort proxy configuration
Ethernet up, AirPort up
[default route] network traffic is directed to the Ethernet
Ethernet proxy configuration
... because Ethernet is above AirPort in the service order
