How does the OS manage to email faxes?

This may not be the appropriate place to ask, but I couldn't think of a better alternative.

System Preferences allows you to check a box and enter an email address that should be copied on all fax receipts, and surprisingly, this actually works. Given the amount of trouble I had to go through to get Asterisk to do the same thing with voicemail, I'm a little stumped by how this happens. If I knew anybody who owned a fax machine, I'd dig a little deeper myself, but I don't so:

1. What is actually emailing these faxes? Is it Postfix?

2. Where are they being sent? Is there some Apple SMTP relay somewhere that accepts these from anyone?
