Moving it out of Applications may be overkill anyway, but I was able to do it on Lion. Now that I think about it, I believe it only offered to create an alias on the desktop when dragging, but some keystroke modifier (Option?) let me move it there.

(For BBEdit it was there automatically.) This would be handy, so I searched around to remind myself how to do this. The short answer is, "Edit the application's Info.plist."
The long answer for TextMate is below. Other apps will be roughly similar.
1. Find the editor app in the Applications folder
2. Right-click and choose Show Package Contents
3. Drill down to find Info.plist and open it in the Property List Editor (or Xcode or whatever)
4. Drill down to Document Types > XML document > CFBundleTypeExtensions, add "fcpxml" and save. (If the app uses Document Content UTIs, use "com.apple.finalcutpro.xml".)
5. To register this change, drag the app from the Applications folder to the Desktop. Start the app and quit. Drag it back to the Applications folder.
Of course, you can also keep TextMate in the Dock and drag documents onto it.
