Hi Glen,
If you're hosting home folders on any given Mac OS X Server box, just turn on web services for that server and then you can visit http://servername/~username and that will direct the browser to the students "Sites" folder within their home folder.
If you want to use a server that isn't hosting the home folders, you'll have to get out the elbow grease and create custom shares, set permissions, etc. Hope this helps.
