For general purpose desktop VNC from iPhone and iPad I use Desktop Connect:

and it works pretty flawlessly. Cool features like pinch to zoom, but not cheap at $15.
For the presenter style setup where you might have a Mac Mini connected to a large format display (TV), let me recommend TouchPad:

It is a real delight to sit/stand in front of a TV and control the computer with this App. Turns the entire surface of the iPad/iPhone into a trackpad. Pinch on the iPad, and the display zooms.
