Here is the syntax for defaults write for the benefit of all using the below referenced PLIST
# Path to PLIST w/o .plist Key to change data type for value and new value
sudo defaults write /Library/Preferences/com.apple.SoftwareUpdate ScheduleFrequency -int 7

I'm not sure of your aims, but in ARD there are templates in the Send UNIX Commands that can list as well as install system updates. You can do those manually or as a task.
If you mean you want to reset the client permissions so that they automatically check for updates, you could send a UNIX command to rewrite the defaults. I don't know the exact syntax off the top of my head, but it would be using the "defaults" command. In Terminal, you can read the default settings by sending this command:
defaults read /Library/Preferences/com.apple.SoftwareUpdate ScheduleFrequency
You can read the man page for "defaults" and probably figure out the syntax for the "defaults write". Then just send that command to the workstations via ARD using "root" as the "send as user". It will the the ScheduleFrequency key you'll want to rewrite; use "7" if you want the systems to check weekly. You can also set the preferences to automatically download the updates. There's no way I know of to have them installed without the user's intervention, though, other than the command in ARD.
