Hi Kelly,
If the app is in Configurator you can install it. When you update an app in Configurator it replaces the old one. If I wanted to go back to an old version I might try restoring the Configurator computer from a backup.
You might also send your question and comment to the app developer, I've seen other devs do cool things for K12 Education requests.
