Update in D2WS

If I create an update operation in D2WS, I assume this is the equivalent of an SQL update statement. How do I separate the values to match and the values to update in the arguments? There doesn't seem to be a way of doing this in WebServicesAssistant and I can't make head or tail of the limited documentation on the rule system.

Please can someone point me in the right direction. :-)
