does anyone know of, or have documentation/tutorials in the creation of
PDF docs using WO5.1

Hello Jevon;

We were doing a large J2EE application and used XSLT/FOP from the apache (http://www.apache.org) group to generate a very complex set PDF documents. FOP has some quirks, but it's pretty good and I imagine it's integration with WebObjects would be fairly easy. Have a look at my article on STEPWISE on using XSLT with WebObjects for some ideas on interrupting the "request/response" cycle to cause other document types to be output.
