Perhaps it's just me, but I have been looking for this documentation
(and
the related stuff) for ages and until now I couldn't find it.
It's not just you. Apple hasn't been too great about including
pointers to (and navigation around) what little documentation exists.
I'm just now beginning to figure out how to find what I need.

been looking in the wrong place on Apple, this stuff seems to be on
the Omni
Group site but I WISH I had found it earlier. I have been looking for
a
good description of EO and EOObjects, how they interact etc. and now
here it
is. Cool!
