Kieran,
Seeing how old this message is, you may have already found what you were looking for, but if you haven't, I found some interesting templates in /Developer/ProjectTypes, particularly
/Developer/ProjectTypes/JavaWebObjectsApplication.projectType/Resources/English.lproj/projectTemplate
Though I couldn't find the template for WOComponents, you might be able to. Looks like everything else is in there.
