James,

Perhaps I am misunderstanding what you mean by "Charting" (being capitalised). Is this some jargon? If you just want an application that charts things (along this particular subject) have a look at OmniGraffle at www.omnigroup.com. You can just drop an EOModel on it and it creates a chart of all the objects and relationships in the model.
