Sure,
you can use Apache FOP to generate pdf Documents.
http://xml.apache.org/fop/
If you want to generate Excel Documents you can also take a look at Project
Wonder. I'm pretty sure I've seen something like that in Wonder.

WebObjects you are welcome to ask me.
