I think most people use CVS: http://www.cvshome.org
A ~great~ alternative is Subversion: http://subversion.tigris.org

What do you mean by version control application? Are you looking for a GUI front end to CVS? or do you want some 'native' version control system for OS X? (Your not linux / unix statement confused me a bit)
Check out Sen:te's CVL: http://www.sente.ch/software/cvl/
MacCVS: http://www.versiontracker.com/dyn/moreinfo/macosx/2559
I have probably left others off the list. If you are on the bleeding edge, check out SCPlugin (http://scplgugin.tigris.org)
this product is still uner development, but will support CVS and Subversion directly from the Finder.
Cheers & Good Luck,
