I think most people use CVS: http://www.cvshome.org

A ~great~ alternative is Subversion: http://subversion.tigris.org

What do you mean by version control application? Are you looking for a GUI front end to CVS?  or do you want some 'native' version control system for OS X? (Your not linux / unix statement confused me a bit)

this product is still uner development, but will support CVS and Subversion directly from the Finder.
